Serves 10 servings

Ingredients for the Clementine Cordial (produces 750ml)

300ml newly squeezed clementine juice
200ml recently pressed lemon juice
500g fine sugar

Ingredients for the Cocktail (produces 850ml, to serve 10)

400ml decent vodka
100ml dry gin
150ml peach liqueur
200ml citrus syrup (as made above)
Whole cranberries, for garnish
Mandarin essential oil, for finishing

Instructions

Making the Cordial: Put all the components in a pot, heat until it reaches a gentle boil, mixing so the sugar melts. After that, turn off the burner and leave to cool fully. Decant into a sealable bottle, seal and refrigerate it in the refrigerator, it can be stored for about one month.

To make Cocktail Base: Pour the specified spirits and syrup into a large bottle, allow it to infuse for 60 minutes, then strain preferably using muslin, making it fully clarified.

When ready to serve: Pour 85ml of your batch mix into your mixing glass containing ice, and agitate carefully for one minute until cold. Filter into a cold coupe glass or equivalent, decorate with some cranberries and finish using a quick spritz of mandarin oil above the glass.
